Instructions

  1. Select firm, sweet apples like Honeycrisp or Fuji; they hold their shape and produce a naturally sweet chip without added sugar. Wash and dry the apples thoroughly to remove any wax or residue.
  2. Using a mandoline slicer set to 1/8 inch (3 mm) or a very sharp chef’s knife, slice the apples crosswise into uniform rounds. Uniform thickness is critical for even dehydration and crispness. Discard any seeds and core pieces that remain.
  3. In a medium bowl, gently toss the apple slices with the ground cinnamon, if using, until evenly coated. The cinnamon adds warmth and depth but is optional; the chips will still be delicious without it.
  4. Preheat the air fryer to 300°F (150°C) for 3 minutes. A preheated basket ensures the slices start drying immediately, preventing sogginess.
  5. Arrange the apple slices in a single layer in the air fryer basket. Do not overlap them, as overlapping creates steaming instead of dehydrating. Work in batches if necessary; this recipe typically fits one batch of 2 medium apples in a standard 5.8-quart air fryer.
  6. Air fry at 300°F (150°C) for 6 minutes. The slices will begin to shrink and release moisture, and the edges may start to curl slightly.
  7. Using tongs, carefully flip each slice. Flipping halfway through promotes even drying and prevents the bottom from over-browning before the top is crisp.
  8. Continue air frying for another 6 to 9 minutes, checking at the 6-minute mark. The chips should be golden brown, dry to the touch, and still slightly pliable; they will crisp further as they cool. If you see any dark brown edges, remove those chips immediately to prevent burning.
  9. Transfer the finished chips to a wire rack in a single layer, not stacked. Cooling on a rack allows air to circulate around each chip, ensuring maximum crunch. Let them cool completely, about 15 minutes.
  10. Repeat the process with any remaining apple slices, letting the air fryer reheat for 1 minute between batches if needed.
  11. Once all chips are completely cool, transfer them to an airtight container. They will stay crisp for up to 1 week stored at room temperature.
  12. If chips lose their crunch over time, re-crisp them in the air fryer at 300°F (150°C) for 1 to 2 minutes, then cool again before serving.
