  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 bone-in, skin-on chicken thighs (about 1.5 lb total)
  • 1 tablespoon chopped fresh cilantro, for garnish

Instructions

  1. In a medium bowl, whisk together the orange juice, lime juice, olive oil, apple cider vinegar, minced garlic, grated onion, dried oregano, ground cumin, paprika, kosher salt, and black pepper. This marinade combines bright citrus and warm spices to tenderize the chicken and build that signature El Pollo Loco flavor.
  2. Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag, removing as much air as possible, or cover the dish with plastic wrap.
  3. Refrigerate the chicken for at least 2 hours, or up to 12 hours for deeper flavor. The acid in the citrus helps break down the proteins, resulting in a more tender texture, but avoid marinating too long or the texture can become mushy.
  4. When ready to cook, remove the chicken from the refrigerator and let it sit at room temperature for 15 minutes. This allows for more even cooking.
  5. Preheat the air fryer to 380°F / 193°C for 3 minutes. This ensures the air fryer is hot enough to start crisping the skin immediately.
  6. Remove the chicken from the marinade, letting any excess drip off. Pat the chicken dry with paper towels to ensure crisp skin.
  7. Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the chicken thighs in the basket in a single layer, skin side down. Do not overcrowd; cook in batches if necessary to ensure even air circulation.
  8. Air fry the chicken skin side down for 8 minutes. This allows the fat to render and the skin to begin crisping.
  9. Flip the chicken using tongs, and continue air frying for 7-9 minutes, or until the internal temperature reaches 165°F / 74°C when measured with an instant-read thermometer at the thickest part of the thigh. The skin should be golden brown and crispy.
  10. Once cooked, remove the chicken from the air fryer and let it rest on a clean cutting board for 5 minutes. Resting allows the juices to redistribute, keeping the meat moist.

Notes

Storage: Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Freezing: You can freeze the cooked chicken for up to 2 months in a freezer-safe container. Reheating: Reheat in the air fryer at 350°F / 177°C for 3-4 minutes until heated through and skin re-crisps. You can also microwave on high for 1-2 minutes, but it won’t be as crispy.
