Creamy, no-cook overnight oats that transform into a luscious, pudding-like breakfast. Rolled oats soften in a mixture of milk, Greek yogurt, and honey, with the brightness of fresh berries and a hint of lemon. This make-ahead meal is perfect for busy mornings.

  • 2 cups whole milk
  • 1 cup full-fat Greek yogurt
  • 3 tablespoons honey
  • 1 tablespoon lemon zest (from 1 lemon)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1 cup mixed fresh berries (blueberries, raspberries, sliced strawberries)
  • Optional for topping: additional fresh berries, a drizzle of honey, a sprinkle of lemon zest

Instructions

  1. In a medium mixing bowl, combine 2 cups old-fashioned rolled oats, 2 cups whole milk, 1 cup full-fat Greek yogurt, 3 tablespoons honey, 1 tablespoon lemon zest, 1/2 teaspoon vanilla extract, and 1/4 teaspoon fine sea salt. Whisk thoroughly to ensure the honey dissolves and the yogurt is fully incorporated into the milk; this creates a uniform base that prevents clumps.
  2. Gently fold in 1 cup mixed fresh berries. Using a silicone spatula, stir just 3-4 times to distribute the berries. Overmixing can break the berries and turn the oats a muddy color.
  3. Divide the mixture evenly among 4 pint-sized glass jars or airtight containers (about 1 cup each). Press the oats down gently with the spatula to submerge any surface oats, which keeps them from drying out.
  4. Seal each jar with a tight-fitting lid and refrigerate for at least 8 hours, but preferably overnight (12-24 hours). The extended rest allows the oats to fully absorb the liquid, breaking down starches and developing a creamy, pudding-like texture.
  5. After resting, remove the jars from the refrigerator. Remove lids and give each jar a gentle stir with a spoon. The oats should have softened completely and the mixture should be thick and spoonable.
  6. If the oats are too thick for your liking, stir in up to 1-2 tablespoons of extra milk per jar to loosen the texture before serving.
  7. Serve cold, or for a warmer option, microwave one uncovered jar on high for 60-90 seconds, stirring halfway through, until just warm to the touch (do not boil). Add desired fresh toppings, such as extra berries, a drizzle of honey, or a pinch of lemon zest.
  8. Store remaining jars in the refrigerator with lids on. Overnight oats keep well for up to 4 days. Stir before serving each time.

Notes

Storage: Keep sealed jars in the refrigerator for up to 4 days. Do not freeze, as the dairy and fresh fruit cause the texture to become watery upon thawing. To reheat: Microwave one jar uncovered on high for 60-90 seconds, stirring halfway, until warm (not boiling). Alternatively, enjoy cold straight from the fridge.
