Buckeye Dip

A creamy peanut butter dip topped with rich chocolate ganache, inspired by the classic Ohio candy. Serve with pretzels, apple slices, or graham crackers for an irresistible dessert appetizer.

  • 1 cup creamy peanut butter (not natural, no-stir variety)
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup heavy cream (for peanut butter layer)
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream (for ganache)
  • Flaky sea salt, for garnish (optional)

Instructions

  1. 1. In a large bowl using a hand mixer or stand mixer fitted with the paddle attachment, beat the softened cream cheese on medium speed until completely smooth and free of lumps, about 1 minute.
  2. 2. Add the peanut butter, powdered sugar, vanilla extract, and 1/4 cup heavy cream. Beat on low speed until combined, then increase to medium-high and beat for 2 minutes until the mixture is light, fluffy, and well-blended. Scrape down the sides and bottom of the bowl to ensure even mixing.
  3. 3. Transfer the peanut butter mixture to a shallow serving dish or pie plate and spread it into an even layer. Using a small offset spatula or the back of a spoon, create a smooth surface. Set aside.
  4. 4. To make the chocolate ganache topping, combine the semi-sweet chocolate chips, unsalted butter, and remaining 1/4 cup heavy cream in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring vigorously with a small whisk or spatula after each interval, until the chocolate is fully melted and the mixture is smooth and shiny. This usually takes about 1 to 2 minutes total.
  5. 5. Carefully pour the ganache over the peanut butter layer, tilting the dish to spread it evenly or using a spatula to cover the entire surface. If desired, sprinkle a pinch of flaky sea salt over the top to balance the sweetness.
  6. 6. Refrigerate the dip uncovered for at least 30 minutes, or until the ganache is firm to the touch. This allows the layers to set and makes dipping easier. Serve chilled or at room temperature.

Notes

Store leftover Buckeye Dip in an airtight container in the refrigerator for up to 5 days. To serve again, let it sit at room temperature for 10 minutes to soften slightly. Do not freeze, as the texture will become grainy. For a dairy-free version, substitute vegan cream cheese, dairy-free peanut butter, and coconut cream for the heavy cream, but the flavor and texture will differ slightly.
