  • 1/2 cup rice vinegar
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sriracha
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water
  • 1 teaspoon sesame oil

Instructions

  1. In a small bowl, whisk together the soy sauce, rice vinegar, granulated sugar, brown sugar, hoisin sauce, sriracha, minced garlic, and grated ginger. Ensure the sugars are fully dissolved into the liquid to create a uniform base.
  2. Pour the mixture into a small saucepan and place over medium heat. Bring it to a gentle simmer, stirring occasionally, until the sugars are completely dissolved and the sauce is fragrant, about 3-4 minutes.
  3. While the sauce heats, make a slurry by whisking the cornstarch with cold water in a separate small bowl until smooth. This prevents lumps from forming and will thicken the sauce evenly.
  4. Once the sauce reaches a simmer, slowly pour the cornstarch slurry into the saucepan while whisking constantly. Continue to whisk to incorporate the slurry fully and prevent clumping.
  5. Reduce the heat to medium-low and maintain a gentle simmer. Cook until the sauce thickens to a glossy, syrupy consistency that coats the back of a spoon, about 5-7 minutes.
  6. Stir in the sesame oil in the final minute of cooking. This adds a nutty aroma and a silky finish to the sauce.
  7. Remove the saucepan from the heat and let the sauce cool slightly for 2-3 minutes. It will continue to thicken as it cools.
  8. Taste the sauce and adjust seasoning: add more sriracha for extra heat, more brown sugar for sweetness, or a pinch of salt if needed. Keep in mind the sauce should be balanced between sweet and spicy.
  9. If you prefer a smoother sauce, strain it through a fine-mesh sieve to remove the garlic and ginger solids. This is optional but yields a more refined texture.
  10. Use immediately by tossing with crispy fried or baked wings, or transfer to an airtight container and refrigerate until ready to use.

Notes

Store in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze for up to 3 months. To reheat, warm gently in a small saucepan over low heat, adding a teaspoon of water if the sauce has thickened too much. Stir frequently to prevent sticking. This sauce is also excellent as a glaze for roasted chicken, shrimp, or tossed with stir-fried vegetables.
