  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lemon juice (from about 1 large lemon)
  • 1 tablespoon red wine vinegar
  • 2 teaspoons honey
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)

Instructions

  1. In a medium bowl, whisk together the Greek yogurt, olive oil, lemon juice, red wine vinegar, and honey until smooth. The yogurt acts as a tenderizer, while the acid and oil add moisture and flavor.
  2. Add the minced garlic, dried oregano, smoked paprika, ground cumin, kosher salt, black pepper, and cayenne (if using) to the yogurt mixture. Whisk thoroughly to ensure all spices are evenly distributed, creating a fragrant, rust-colored marinade.
  3. Place the chicken breasts on a cutting board and pat them dry with paper towels. If any breast is thicker than 1 inch, place it between two sheets of plastic wrap and gently pound with a meat mallet to an even 1-inch thickness. This ensures even cooking and prevents dry spots.
  4. Place the chicken breasts in a large resealable plastic bag or a shallow glass dish. Pour the marinade over the chicken, turning each piece to coat completely. Press out excess air from the bag and seal, or cover the dish with plastic wrap.
  5. Refrigerate the chicken for at least 2 hours, and up to 12 hours for maximum flavor and tenderness. Do not exceed 12 hours, as the acid in the lemon juice and yogurt can begin to break down the chicken’s texture, making it mushy.
  6. About 30 minutes before grilling, remove the chicken from the refrigerator and let it sit at room temperature. This helps the chicken cook more evenly, reducing the risk of a burnt exterior and raw center.
  7. Preheat a gas grill to medium-high heat (about 400°F / 204°C) for 10-15 minutes with the lid closed. For a charcoal grill, light the coals and wait until they are covered with a light gray ash. Clean the grates with a grill brush and then oil them lightly by dipping a paper towel in vegetable oil and using tongs to wipe the grates.
  8. Remove the chicken from the marinade, letting any excess drip off. Discard the remaining marinade—do not reuse it as a sauce since it has been in contact with raw chicken.
  9. Place the chicken on the preheated grill over direct heat. Grill for 5-7 minutes without moving the chicken, until the bottom has distinct grill marks and the chicken releases easily from the grates. If it sticks, it’s not ready to flip.
  10. Flip the chicken and grill for another 5-7 minutes, until the internal temperature reaches 165°F / 74°C when checked with an instant-read thermometer inserted into the thickest part of the breast. The outside should be golden-brown with charred spots.
  11. If the chicken is browning too quickly but isn’t done, move it to the cooler side of the grill (indirect heat) and continue cooking with the lid closed until it reaches the target temperature. This prevents burning while ensuring the center is cooked.
  12. Transfer the grilled chicken to a clean cutting board and let it rest for 5-10 minutes. This allows the juices to redistribute throughout the meat, ensuring every bite is moist and flavorful. Slice against the grain and serve.

Notes

Storage: Leftover grilled chicken can be stored in an airtight container in the refrigerator for up to 4 days. To freeze, wrap each breast individually in plastic wrap and place in a freezer-safe bag for up to 3 months. Reheat gently in a 300°F / 150°C oven for 10-15 minutes, or in a skillet over medium-low heat with a splash of chicken broth to keep it moist. Avoid microwaving, as it can make the chicken tough and rubbery.
