  • 4 boneless skinless chicken breasts (6 oz each), pounded to 1/2-inch thickness
  • 1/2 cup all-purpose flour (for dredging)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil, divided
  • 8 ounces cremini mushrooms, sliced
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup Madeira wine
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 4 slices mozzarella cheese (1 oz each)
  • 4 slices provolone cheese (1 oz each)
  • 1 pound asparagus, trimmed
  • Fresh parsley for garnish (optional)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound with a rolling pin or mallet to an even 1/2-inch thickness. This ensures uniform cooking and tenderness. Season both sides with salt and pepper, then dredge each breast in flour, shaking off any excess to avoid a gummy coating.
  2. Heat 1 tablespoon butter and 1 tablespoon olive oil in a large (12-inch) skillet over medium-high heat until the butter foams and then subsides, indicating it is hot enough. Sear the chicken breasts for 3-4 minutes per side, until deeply golden brown and cooked through (internal temperature should reach 165°F / 74°C). Transfer the chicken to a plate and tent loosely with foil to keep warm.
  3. In the same skillet, add the remaining 1 tablespoon butter and 1 tablespoon olive oil over medium heat. Add the sliced cremini mushrooms and chopped shallot. Cook, stirring occasionally, for 5-6 minutes until the mushrooms release their liquid, the liquid evaporates, and the edges begin to brown. This develops the savory umami base for the sauce.
  4. Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly to prevent burning. The garlic should become aromatic but not brown.
  5. Pour in the Madeira wine and use a wooden spoon to scrape up the browned bits (fond) from the bottom of the skillet. Let the wine simmer vigorously for about 2 minutes, until reduced by half and slightly syrupy. This deglazing step incorporates the caramelized flavors into the sauce.
  6. Add the chicken broth and bring to a boil. Reduce the heat to medium-low and let the sauce simmer for 5 minutes, allowing it to thicken slightly and concentrate in flavor. You should see gentle bubbles across the surface.
  7. Stir in the heavy cream and fresh thyme leaves. Simmer for 3-4 minutes, stirring occasionally, until the sauce coats the back of a spoon (nappe consistency). Season with additional salt and pepper to taste. Remove from heat.
  8. Meanwhile, preheat your oven’s broiler to high (or preheat oven to 425°F / 218°C if using a baking dish instead of an oven-safe skillet). Bring a pot of salted water to a boil and fill a bowl with ice water. Blanch the asparagus spears in the boiling water for 2 minutes, then immediately transfer them to the ice water to stop the cooking. Drain and set aside.
  9. Return the seared chicken breasts to the skillet, nestling them into the mushroom Madeira sauce. Top each breast with one slice of mozzarella and one slice of provolone, overlapping slightly to fully cover the chicken.
  10. Place the skillet under the broiler (or transfer to the oven if using a baking dish) and broil for 2-3 minutes, watching carefully, until the cheese is fully melted and bubbly with golden spots. The cheese should form a cohesive, gooey layer over the chicken.
  11. While the chicken is under the broiler, heat a separate skillet or pan over medium-high heat with 1 tablespoon olive oil (or butter). Add the blanched asparagus and sauté for 2-3 minutes, turning occasionally, until heated through and crisp-tender. Season with a pinch of salt and pepper.
  12. To serve, place one chicken breast on each plate with a generous spoonful of the mushroom Madeira sauce poured over the top. Arrange a portion of sautéed asparagus alongside. Garnish with fresh parsley if desired.
  13. For best results, allow the sauce to rest for 1-2 minutes off the heat before serving to let the flavors meld. The cream sauce will continue to thicken slightly as it cools.

Notes

Store leftover chicken and sauce in an airtight container in the refrigerator for up to 3 days. To reheat, place in a covered skillet over medium-low heat with a splash of chicken broth to loosen the sauce, or microwave in 30-second intervals until warmed through. The asparagus is best reheated separately in a hot skillet. Freezing is not recommended due to the cream sauce.
