Ingredients

Scale
  • 4 (6-ounce) New York strip steaks, about 1 inch thick
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, thinly sliced
  • 2 tablespoons unsalted butter, divided
  • 1/4 cup finely diced shallot (about 1 large shallot)
  • 2 cloves garlic, minced
  • 1/3 cup brandy or cognac
  • 1 cup low-sodium beef broth
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Remove steaks from refrigerator 30 minutes before cooking to bring them to room temperature. Pat steaks dry with paper towels to ensure a good sear; moisture on the surface will cause steaming instead of browning. Season both sides evenly with kosher salt and black pepper.
  2. Heat a large heavy-bottomed skillet (preferably cast iron or stainless steel) over medium-high heat for 2 minutes until hot. Add olive oil and swirl to coat; the oil should shimmer and just begin to smoke, indicating the pan is ready.
  3. Carefully lay the steaks in the skillet, working in batches if necessary to avoid crowding. Sear without moving for 4 minutes for medium-rare, adjusting time based on thickness and desired doneness. Flip steaks and continue cooking for another 3 minutes for medium-rare (internal temperature 135°F / 57°C). For medium, cook 5 minutes per side or until 140°F / 60°C.
  4. Transfer steaks to a plate and tent loosely with foil; do not wipe the pan. The residual juices and browned bits are essential for the sauce. Reduce heat to medium.
  5. Add 1 tablespoon butter to the pan and let it melt. Add sliced mushrooms and cook undisturbed for 1 minute, then stir and cook for 3-4 minutes until golden brown and their moisture has evaporated. The mushrooms should be well-browned for deep, savory flavor.
  6. Add diced shallot and minced garlic to the mushrooms. Cook, stirring frequently, for about 1 minute until shallot turns translucent and garlic is fragrant. Be careful not to burn the garlic, as it will become bitter.
  7. Carefully pour the brandy or cognac into the pan. If using a gas stove, tilt the pan slightly to ignite the alcohol for a dramatic flambé, or simply let it simmer for 1 minute to cook off the alcohol. Use a long lighter if needed and stand back — flames will subside quickly.
  8. Add beef broth and bring to a simmer, scraping the bottom of the pan with a wooden spoon to deglaze and incorporate browned bits. Let the liquid reduce by about half, approximately 3-4 minutes, which concentrates the flavor.
  9. Reduce heat to medium-low and stir in heavy cream, Dijon mustard, and Worcestershire sauce. Simmer gently for 2-3 minutes until the sauce thickens slightly and coats the back of a spoon. Taste and adjust seasoning with additional salt and pepper if needed.
  10. Remove the sauce from heat and whisk in the remaining 1 tablespoon butter until fully melted for a glossy finish. Return the steaks and any accumulated juices to the pan, spooning sauce over the top. Let rest for 1 minute before serving.
  11. To serve, transfer each steak to a plate and spoon generous amounts of mushroom sauce on top. Garnish with chopped fresh parsley. Serve immediately with mashed potatoes, egg noodles, or steamed green beans.

Notes

Storage: Refrigerate leftover steak and sauce in an airtight container for up to 3 days. Reheating: For best results, reheat gently in a skillet over medium-low heat with a splash of water or broth, turning the steak occasionally until warmed through (about 5 minutes). Alternatively, microwave individual portions in 30-second bursts at 50% power. Freezing is not recommended because the cream sauce may separate and become grainy upon thawing.
