Chipotle Guacamole

A smoky, spicy twist on classic guacamole, with the earthy heat of chipotle peppers balanced by creamy avocado and bright lime. This guacamole is chunky, fresh, and perfect for dipping or topping tacos.

  • 3 ripe avocados
  • 2 tablespoons fresh lime juice (from about 1 lime)
  • 1/4 cup red onion, finely diced
  • 1 small jalapeño, seeded and minced (about 1 tablespoon)
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup tomato, seeded and diced (about 1 small Roma tomato)
  • 1/2 teaspoon kosher salt
  • 1 teaspoon chipotle pepper in adobo sauce, minced (from canned chipotles)

Instructions

  1. Cut the avocados in half lengthwise around the pit. Twist to separate, then remove the pit by tapping it firmly with the blade of a chef’s knife and twisting out. Scoop the flesh into a large mixing bowl with a spoon.
  2. Add the lime juice and kosher salt to the bowl. Using a fork or a potato masher, mash the avocado to your desired consistency—chunky or smooth. The lime juice helps prevent browning and adds acidity to balance the richness.
  3. Fold in the finely diced red onion, minced jalapeño, chopped cilantro, diced tomato, and minced chipotle pepper. Stir gently to distribute evenly without over-mashing the avocado chunks.
  4. Taste the guacamole and adjust seasoning if needed: add more salt for savoriness, more lime juice for brightness, or an extra pinch of chipotle for heat. The guacamole should be creamy, smoky, and slightly tangy with a kick.
  5. Transfer the guacamole to a serving bowl. To prevent browning, press a piece of plastic wrap directly onto the surface of the guacamole, eliminating air contact, and refrigerate until ready to serve. Guacamole is best served within an hour of making.
  6. If preparing ahead, store in the refrigerator for up to 2 days with the plastic wrap pressed firmly on the surface. Before serving, stir well and scrape off any darkened top layer; the guacamole underneath will remain fresh and green.
  7. Serve with tortilla chips, as a topping for tacos or burrito bowls, or alongside grilled meats. The smoky chipotle flavor pairs especially well with charred corn or grilled chicken.
  8. For a milder version, reduce or omit the jalapeño and chipotle. For extra heat, add a pinch of cayenne or a dash of hot sauce. This guacamole is naturally gluten-free, dairy-free, and vegan.

Notes

Store any leftover guacamole in an airtight container with plastic wrap pressed directly onto the surface to prevent browning. Refrigerate for up to 2 days. If browning occurs, simply scrape off the top layer before serving. Do not freeze — thawed avocado becomes watery and loses texture. To revive slightly browned guacamole, stir in a squeeze of fresh lime juice.
