  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon honey (optional, for subtle sweetness)

Instructions

  1. In a small saucepan, combine vegetable oil and unsalted butter. Heat over medium heat until the butter is fully melted and begins to foam, about 1–2 minutes. This creates a flavorful base for blooming the spices.
  2. Add cayenne pepper, paprika, garlic powder, and onion powder. Whisk constantly for 30 seconds to bloom the spices in the hot fat, which deepens their flavor and releases essential oils.
  3. Stir in brown sugar, kosher salt, and black pepper. Continue whisking until the sugar dissolves and the mixture is smooth, about 30 seconds. The sugar adds sweetness to balance the heat.
  4. Reduce heat to low. Add honey if using, and whisk to combine. Honey introduces a subtle floral sweetness that rounds out the intense spice without making the sauce overly sweet.
  5. Simmer gently for 1 minute, stirring occasionally, until the sauce thickens slightly and becomes glossy. Do not boil aggressively or the sugar may burn, resulting in a bitter taste.
  6. Remove from heat and let cool for 2–3 minutes. The sauce will thicken further as it cools; it should be pourable but cling to the back of a spoon.
  7. Taste and adjust seasoning: add more cayenne for extra heat or a pinch of salt if needed. Keep in mind the sauce will be used as a coating, so it should be slightly saltier than you’d eat alone.
  8. Use immediately by tossing with hot fried chicken tenders or drizzling over chicken sandwiches. Leftover sauce can be stored in an airtight container in the refrigerator.

Notes

Storage: Refrigerate in an airtight container for up to 1 week. Reheat gently in the microwave at 50% power in 15-second bursts or on the stovetop over low heat, adding a splash of water if needed to restore the glossy consistency. The sauce solidifies when cold; reheat until liquid and glossy. Not recommended for freezing.
