Instructions

  1. Gently flake the imitation crab into a medium mixing bowl, breaking apart any large chunks with your fingers or the tines of a fork. Aim for uniform bite-sized pieces about 1/2 inch each so the texture blends evenly with the dressing and vegetables.
  2. Finely dice the celery and onion, ensuring the pieces are no larger than the crab pieces. Keep the dice small (about 1/4 inch) to avoid overpowering the delicate crab and to allow each forkful to have a balanced mix of crunch and creaminess.
  3. In a separate small bowl, whisk together the mayonnaise, lemon juice, sugar, salt, and white pepper until smooth and completely dissolved. Taste the dressing — it should be tangy with a subtle sweetness; adjust salt or lemon juice if needed.
  4. Pour the dressing over the crab mixture and add the diced celery and onion. Use a rubber spatula to fold everything together gently, scraping the bottom and sides of the bowl. Do not overmix, as you want to keep the crab pieces intact for a flaky, not mushy, salad.
