A refreshing frozen non-alcoholic drink inspired by the signature Texas Roadhouse cooler. This strawberry-lime slushie is perfectly sweet and tart, with a smooth, icy texture that makes it an ideal thirst-quencher for any occasion.

  • 2 cups frozen strawberries (about 10 oz)
  • 1/4 cup freshly squeezed lime juice (from about 23 limes)
  • 1/4 cup simple syrup (see note)
  • 3 cups ice cubes (about 12 oz)
  • Lime wedges and fresh strawberries for garnish (optional)

Instructions

  1. Place the frozen strawberries, lime juice, simple syrup, and ice cubes into a high-speed blender. Make sure the strawberries are fully frozen for the best slushie texture; if using fresh strawberries, freeze them solid first.
  2. Blend on high speed for 30-45 seconds, starting on low and gradually increasing to high, until the mixture is completely smooth and has a thick, snow-like consistency. Stop and scrape down the sides of the blender jar with a spatula if needed.
  3. If the mixture is too thick to blend, add 1-2 tablespoons of cold water or a splash of lemon-lime soda (such as Sprite) to help it move, but avoid adding too much liquid or the drink will become watery.
  4. Taste the cooler: it should be balanced between sweet and tart. If you prefer it sweeter, add another tablespoon of simple syrup and blend again. For more tartness, add a squeeze of fresh lime juice.
  5. Divide the frozen mixture evenly among 4 tall glasses (about 10-12 ounces each). Serve immediately with a straw, and garnish each glass with a lime wedge and a fresh strawberry if desired.
  6. For a thicker, more scoopable texture, use 3 1/2 cups of ice and blend only until the ice is crushed but not completely smooth — this creates a granita-like consistency.

Notes

Store any leftover cooler in an airtight container in the freezer for up to 1 week. To re-serve, let it sit at room temperature for 5-10 minutes, then re-blend with a splash of water or soda until smooth. For a lower-sugar version, use a sugar-free simple syrup or replace the simple syrup with 1-2 tablespoons of honey or agave (though this will slightly alter the flavor). To make your own simple syrup: combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and let cool completely before using. Store in the refrigerator for up to 1 month.
