Tender, shredded chicken simmered in a smoky, tangy sauce with tomato, chipotle, and warm spices. Slow-cooked to juicy perfection, these tacos are easy to assemble and packed with bold flavor, perfect for weeknight dinners or casual gatherings.

  • 1 1/2 lbs boneless skinless chicken thighs (about 46 thighs)
  • 1 tbsp olive oil
  • 1/2 cup yellow onion, finely diced (about 1/2 medium onion)
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 tbsp chipotle peppers in adobo sauce, finely chopped (from can)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 cup low-sodium chicken broth
  • 2 tbsp fresh lime juice (from 1 lime)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 812 small corn or flour tortillas, warmed
  • Optional toppings: sour cream, shredded lettuce, diced tomato, shredded cheese, sliced avocado

Instructions

  1. Pat the chicken thighs dry with paper towels to remove excess moisture, which helps the seasoning adhere and prevents steaming. Trim any excess fat, but leave a thin layer for moisture.
  2. Heat olive oil in a large skillet over medium-high heat until it shimmers. Sear the chicken thighs in a single layer, working in batches if needed, for 3–4 minutes per side until golden brown — this step builds deep flavor through browning.
  3. Transfer the seared chicken to the crockpot. Do not wipe the skillet — the browned bits (fond) add richness. Reduce heat to medium, add the diced onion, and cook for 3–4 minutes until translucent and softened, stirring occasionally.
  4. Add the minced garlic to the skillet and cook for 30 seconds until fragrant, stirring constantly to avoid burning. Pour in the undrained diced tomatoes, chopped chipotle peppers, cumin, smoked paprika, oregano, salt, pepper, and chicken broth. Stir, scraping up the browned bits from the bottom of the pan.
  5. Bring the sauce to a simmer over medium heat, then pour it over the chicken in the crockpot. Ensure the chicken is mostly submerged in liquid; add a splash more broth if needed.
  6. Cover the crockpot and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the chicken is tender and easily shreds with a fork. Check at the minimum time to avoid overcooking, as thighs become stringy if cooked too long.
  7. Using tongs, transfer the cooked chicken to a large cutting board or bowl. Let it rest for 5 minutes — this allows juices to redistribute, keeping the meat moist.
  8. Using two forks, shred the chicken into bite-sized pieces, discarding any large pieces of fat. Return the shredded chicken to the crockpot and stir into the sauce.
  9. Stir in the fresh lime juice and half of the chopped cilantro. Taste and adjust seasoning with additional salt or lime juice if needed.
  10. Warm the tortillas: For corn tortillas, heat a dry skillet over medium-high heat for 30 seconds per side until pliable and lightly charred. For flour, wrap in damp paper towels and microwave for 30 seconds.
  11. To serve, pile about 1/3 cup of shredded chicken onto each tortilla. Garnish with remaining cilantro and your choice of toppings like sour cream, shredded lettuce, diced tomato, cheese, or avocado.

Notes

Storage: Refrigerate leftover chicken in an airtight container for up to 4 days. Freezing: Cool completely, then freeze in a freezer-safe bag for up to 3 months. Thaw overnight in the fridge. Reheating: Warm shredded chicken in a skillet over medium heat with a splash of broth or water until steaming, about 5 minutes. Avoid microwaving on high as it can dry out the chicken.
