The chicken is perfectly seasoned and fried to a golden brown, delivering that iconic KFC-inspired flavor without the gluten.

  • 1 lb (450g) boneless, skinless chicken breast, cut into 1-inch strips
  • 1 cup buttermilk (or 1 cup whole milk mixed with 1 tbsp lemon juice, let sit 5 minutes)
  • 1 cup gluten-free all-purpose flour (e.g., King Arthur Measure-for-Measure)
  • 1/2 cup white rice flour
  • 1 tbsp cornstarch
  • 2 tsp paprika
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 2 large eggs, beaten
  • 1/2 cup vegetable oil, for frying (plus more if needed)
  • 4 large gluten-free tortillas (810 inch)
  • 1 cup shredded iceberg or romaine lettuce
  • 1 large tomato, sliced into thin rounds
  • 1/4 cup ranch dressing (store-bought gluten-free or homemade)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. In a medium bowl, combine the chicken strips and buttermilk. Stir to coat each piece. Cover and refrigerate for at least 20 minutes (or up to 2 hours) to tenderize the chicken and help the coating adhere.
  2. While the chicken marinates, prepare the gluten-free breading. In a shallow dish, whisk together the gluten-free flour, rice flour, cornstarch, paprika, garlic powder, onion powder, oregano, basil, thyme, salt, black pepper, and cayenne (if using).
  3. Set up a dredging station: place the beaten eggs in a separate shallow dish and the seasoned flour mixture in another. Remove the chicken from the buttermilk, letting any excess drip off.
  4. Dip each chicken strip first into the egg, allowing the excess to drip off, then coat thoroughly in the flour mixture, pressing the coating onto the chicken to ensure it sticks. Shake off any excess and place the coated strips on a wire rack. Let them rest for 5 minutes—this helps the coating adhere better during frying.
  5. In a large, heavy-bottomed skillet (such as cast iron), heat the vegetable oil over medium-high heat until it shimmers and a small piece of breading sizzles immediately when added. The oil should be about 1/2 inch deep, maintaining a temperature around 350°F / 177°C if using a thermometer.
  6. Working in batches to avoid overcrowding (this prevents the oil temperature from dropping), fry the chicken strips for 4-5 minutes per side, until golden brown and cooked through. The internal temperature of the chicken should reach 165°F / 74°C.
  7. Using tongs, transfer the fried chicken to a wire rack set over a baking sheet to drain. Sprinkle lightly with a pinch of salt while still hot. Repeat with the remaining strips, allowing the oil to return to temperature between batches.
  8. Alternatively, for a healthier oven version, preheat the oven to 425°F / 218°C. Place the coated chicken strips on a lightly oiled baking sheet in a single layer. Spray the tops with cooking oil. Bake for 12-15 minutes, flipping halfway, until golden and the internal temperature reaches 165°F / 74°C. No need to rest.
  9. Warm the gluten-free tortillas on a dry skillet over medium heat for about 15-20 seconds per side, or until pliable and lightly toasted. This makes them easier to roll without cracking.
  10. To assemble each Twister: lay a tortilla on a flat surface. Spread about 1 tablespoon of ranch dressing evenly in the center, leaving a 2-inch border.
  11. Place a handful of shredded lettuce (about 1/4 cup) on top of the dressing, followed by 2 tomato slices and a few fried chicken strips. Optionally, sprinkle with shredded cheddar cheese.
  12. Fold the sides of the tortilla inward over the filling, then roll it up tightly from the bottom, tucking the filling in as you go. Wrap the completed Twister in parchment paper or foil to hold it together.
  13. Repeat with the remaining tortillas. Slice each Twister in half crosswise, if desired, and serve immediately with extra ranch dressing for dipping.

Notes

Storage: The fried chicken strips are best served fresh. However, cooked, cooled strips can be stored in an airtight container in the fridge for up to 3 days. Reheat in a preheated 400°F / 204°C oven on a wire rack for 8-10 minutes to crisp up. The assembled wraps are not recommended for storage as they become soggy. Buttermilk substitution: If you don’t have buttermilk, mix 1 cup whole milk with 1 tablespoon fresh lemon juice or white vinegar and let sit for 5 minutes to clabber. Gluten-free flour blend: Use a high-quality gluten-free all-purpose flour that contains xanthan gum for the best texture. Avoid blends with a strong bean flour taste. Frying oil: Ensure the oil is not smoking, and adjust heat as needed to maintain a gentle sizzle. Overcrowding the pan will lower the oil temperature, leading to greasy, less crispy chicken.
