Healthy Chicken Piccata (Cheesecake Factory Style)

Healthy Chicken Piccata (Cheesecake Factory Style) - recipe card

This lightened-up chicken piccata delivers all the bright, lemony, buttery flavor of the restaurant favorite without the heavy sauce. Chicken breasts are pounded thin, lightly dredged, and pan-seared until golden, then finished with a vibrant lemon-caper sauce thickened with Greek yogurt. Serve over whole-wheat pasta or zoodles for a satisfying, protein-packed dinner that feels indulgent but fits your wellness goals.

Ingredients

Scale
  • 2 (8 oz / 225 g) boneless, skinless chicken breasts, halved horizontally
  • 1/2 cup (60 g) all-purpose flour, for dredging
  • 1 teaspoon (3 g) garlic powder
  • 1/2 teaspoon (2.5 g) kosher salt, plus more for seasoning
  • 1/4 teaspoon (0.5 g) black pepper, freshly ground
  • 2 tablespoons (30 ml) olive oil, divided
  • 2 tablespoons (28 g) unsalted butter, divided
  • 1/2 cup (120 ml) low-sodium chicken broth
  • 3 tablespoons (45 ml) fresh lemon juice
  • 2 tablespoons (20 g) capers, drained and rinsed
  • 1/4 cup (60 g) plain full-fat Greek yogurt
  • 2 tablespoons (8 g) fresh parsley, chopped, for garnish
  • 1 lemon, thinly sliced, for serving (optional)

Instructions

  1. Lay the chicken breasts flat on a cutting board and cover with plastic wrap. Using a meat mallet (or heavy skillet), pound each breast to an even 1/2-inch (1.25 cm) thickness. This ensures quick, even cooking and tender results.
  2. In a shallow dish, combine the flour, garlic powder, 1/2 teaspoon salt, and black pepper. Dredge each chicken piece in the flour mixture, shaking off any excess. The coating should be a thin, even layer – excess flour will make the sauce pasty.
  3. Heat 1 tablespoon of oil and 1 tablespoon of butter in a large (12-inch / 30 cm) skillet over medium-high heat. When the butter has melted and the foam starts to subside, gently place half the chicken pieces in the pan. Don’t crowd the pan – work in batches if needed. Cook for 3-4 minutes on the first side until deeply golden, then flip and cook for another 3 minutes until internal temperature reaches 165°F (74°C) on an instant-read thermometer.
  4. Transfer the cooked chicken to a plate and cover loosely with foil. Repeat with the remaining chicken, adding the remaining 1 tablespoon oil and 1 tablespoon butter to the pan. If the brown bits (fond) start to scorch, lower the heat slightly.
  5. After removing the second batch of chicken, reduce the heat to medium-low. Pour in the chicken broth and use a wooden spatula to scrape up the browned bits from the bottom of the pan – this adds tremendous flavor to the sauce.
  6. Stir in the lemon juice and capers. Bring the sauce to a gentle simmer and let it cook for 2-3 minutes, allowing the liquid to reduce slightly by about a quarter. Taste and adjust salt with a pinch if needed.
  7. Remove the skillet from the heat. Whisk in the Greek yogurt until fully incorporated – this creates a creamy, tangy sauce without heavy cream. If the sauce seems too thick, add a splash of chicken broth to reach your desired consistency.
  8. Return the chicken to the skillet, spooning the sauce over the top. Let it rest off the heat for 2 minutes so the flavors meld. Garnish with fresh parsley and lemon slices, if desired. Serve immediately with your choice of pasta, rice, or vegetables.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended as the yogurt sauce may separate upon thawing. Reheating: Gently reheat in a skillet over medium-low heat, adding a splash of chicken broth or water to loosen the sauce. Alternatively, microwave at 70% power in 30-second intervals, stirring between, until warmed through (about 1-2 minutes). Do not boil, as this may cause the yogurt to curdle.
