A versatile, velvety cream sauce base perfect for pasta, chicken, or vegetables. This quick stovetop sauce combines heavy cream, cream cheese, and chicken broth for a rich, savory finish that thickens beautifully without a roux.

  • 1 tbsp unsalted butter
  • 2 oz cream cheese, softened and cut into small cubes
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried thyme
  • 1/4 tsp kosher salt
  • 1/8 tsp freshly ground black pepper

Instructions

  1. Place a medium saucepan over medium heat and add the butter. Swirl the pan until the butter melts and the foam subsides, about 1 minute. Do not let the butter brown.
  2. Add the cubed cream cheese to the melted butter and whisk continuously until the cream cheese softens and begins to break down into the butter, about 1 minute. The mixture should look smooth with no large lumps.
  3. Slowly pour in the heavy cream while whisking vigorously to prevent scorching. Continue whisking until the cream and cream cheese are fully combined and the mixture is smooth, about 30 seconds.
  4. Add the chicken broth, garlic powder, onion powder, dried thyme, kosher salt, and black pepper. Whisk until all dry ingredients are dissolved and the sauce is uniform.
  5. Increase heat to medium-high and bring the sauce to a gentle simmer — small bubbles will break the surface but not a rolling boil. Immediately reduce heat to medium-low. Simmer, whisking occasionally, until the sauce thickens enough to coat the back of a spoon, 3 to 4 minutes. If the sauce starts to boil vigorously, reduce heat further.
  6. Remove the saucepan from the heat. Taste the sauce and adjust seasoning with additional salt or pepper if needed. Use immediately over pasta, chicken, or vegetables, or allow to cool for storage.

Notes

Store the sauce in an airtight container in the refrigerator for up to 5 days. To reheat, place in a small saucepan over low heat and whisk until warmed through and smooth; add a splash of milk or broth if too thick. Freeze in a freezer-safe container for up to 3 months — thaw overnight in the refrigerator before reheating. If the sauce separates after freezing, whisk vigorously or blend briefly with an immersion blender to restore a smooth emulsion.
