  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup apple cider vinegar
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon vanilla extract (optional, for depth)

Instructions

  1. Prepare the habaneros by slicing each pepper into thin rings, about 1/8-inch thick. Use gloves to protect your hands from the capsaicin oils, and avoid touching your face or eyes. Leave the seeds intact for full heat, or remove half the seeds for a more approachable spice level.
  2. In a medium stainless steel or enameled saucepan (not bare aluminum, which can react with acid), combine the granulated sugar, water, apple cider vinegar, and kosher salt. Stir gently with a heat-resistant spatula to dissolve the sugar, then bring the mixture to a boil over medium-high heat. Watch for the liquid to become clear and fully bubbling — about 2-3 minutes.
  3. Once the syrup is boiling, reduce the heat to medium-low to maintain a steady simmer. Add the sliced habanero rings to the pan, stirring gently to coat all slices in the syrup. Simmer for 15-18 minutes, stirring occasionally, until the peppers become translucent and the syrup thickens to a loose honey consistency (it will thicken more as it cools).
  4. Test the syrup by dipping a cold spoon into the pan; the syrup should coat the back of the spoon and drip slowly. If it runs off quickly, continue simmering for another 2-3 minutes. Remove from heat and stir in the vanilla extract if using — the heat will bloom the flavor without cooking it off.
  5. Transfer the candied habaneros and syrup to a clean heat-safe glass jar (8 oz or larger). Let cool completely at room temperature, about 1 hour, then seal with a lid. For best results, refrigerate at least 24 hours before using to allow flavors to meld and the syrup to fully set.

Notes

Store in an airtight glass jar in the refrigerator for up to 3 months. The syrup may crystallize slightly over time; simply microwave the jar for 10-15 seconds or warm in a water bath to reliquefy. For longer storage, process in a boiling water canner for 10 minutes (adjust for altitude) — sealed jars will keep in a cool, dark pantry for up to 1 year. Once opened, refrigerate. Use as a topping for cream cheese and crackers, a spicy garnish for margaritas or Bloody Marys, or brush onto grilled chicken or pork during the last 5 minutes of cooking.
