  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup dill pickle juice
  • 1 large egg
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup avocado oil, for frying

Instructions

  1. In a medium bowl, combine the chicken cubes and dill pickle juice. Ensure all pieces are submerged; cover and refrigerate for at least 30 minutes (or up to 2 hours) to tenderize and infuse flavor. Drain and pat dry with paper towels before coating.
  2. In a shallow dish, whisk the egg until frothy. In a separate shallow dish, mix together the almond flour, Parmesan cheese, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper until well combined.
  3. Working in batches, dip each chicken piece into the egg, allowing excess to drip off, then press into the almond flour mixture, coating all sides thoroughly. Place coated nuggets on a wire rack set over a baking sheet; let rest for 5 minutes to help the coating adhere.
  4. Heat the avocado oil in a large skillet over medium-high heat until shimmering (about 350°F / 177°C if using a thermometer). To test, drop a pinch of flour into the oil – it should sizzle immediately.
  5. Carefully place a single layer of nuggets into the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes per side, until golden brown and crispy. The internal temperature of the chicken should reach 165°F (74°C).
  6. Using tongs, transfer the cooked nuggets to a paper towel-lined plate to drain excess oil. Repeat with the remaining nuggets, allowing the oil to return to temperature between batches.
  7. Serve immediately with your favorite keto-friendly dipping sauce, such as sugar-free honey mustard or ranch. Enjoy while hot and crispy.

Notes

Store leftover nuggets in an airtight container in the refrigerator for up to 3 days. To reheat, place on a baking sheet in a preheated 375°F (190°C) oven for 8-10 minutes, or until heated through and crispy. You can also reheat in an air fryer at 350°F (177°C) for 4-5 minutes. For best texture, avoid microwaving as it will make them soggy. Freeze uncooked coated nuggets on a baking sheet, then transfer to a freezer bag for up to 2 months; fry from frozen, adding 2-3 minutes to the cooking time.
