Low Carb Swiss Chalet Chicken

Low Carb Swiss Chalet Chicken - recipe card

A low-carb twist on the classic Swiss Chalet rotisserie chicken, featuring juicy roasted chicken breasts topped with a rich, creamy mushroom sauce and melted Swiss cheese. The sauce is thickened with cream and cream cheese, avoiding any added carbs, while the chicken stays moist and flavorful.

Ingredients

Scale
  • 2 tbsp olive oil, divided
  • 1 1/2 lb (4 boneless, skinless chicken breasts, about 5 oz each)
  • 1 tsp kosher salt, divided, plus more to taste
  • 1/2 tsp black pepper, freshly ground, divided
  • 1 medium yellow onion, finely diced
  • 8 oz cremini mushrooms, sliced 1/4-inch thick
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth (unsalted)
  • 1/2 cup heavy cream
  • 4 oz cream cheese, cut into cubes
  • 1/2 tsp dried thyme
  • 4 slices Swiss cheese (about 4 oz total)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F / 190°C. Pat the chicken breasts dry with paper towels, then season both sides with 1/2 tsp of the salt and 1/4 tsp of the pepper. Drying the surface ensures a good sear and prevents steaming.
  2. Heat 1 tbsp of olive oil in a large oven-safe skillet (like cast iron) over medium-high heat until the oil shimmers. Carefully place the chicken breasts in the skillet, smooth side down. Sear for 4-5 minutes, without moving, until a deep golden crust forms. Flip and sear the other side for 3-4 minutes.
  3. Transfer the chicken to a plate and set aside. The chicken does not need to be fully cooked at this point—it will finish in the oven.
  4. Reduce the heat to medium. Add the remaining 1 tbsp olive oil to the same skillet. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until translucent and starting to soften.
  5. Add the sliced mushrooms and remaining 1/2 tsp of salt. Cook for 5-6 minutes, stirring occasionally, until the mushrooms release their liquid and it cooks off, and they turn golden brown. The mushrooms should look shriveled and caramelized.
  6. Add the minced garlic and cook for 30 seconds until fragrant. Stir constantly to prevent burning.
  7. Pour in the chicken broth and deglaze the pan, scraping up any browned bits from the bottom with a wooden spoon. Let the broth simmer for 2 minutes, reducing slightly.
  8. Reduce heat to low. Stir in the heavy cream, cream cheese cubes, and dried thyme. Whisk gently until the cream cheese melts into a smooth, creamy sauce. Season with the remaining 1/4 tsp pepper and additional salt to taste. Simmer for 1-2 minutes until the sauce thickens slightly—it should coat the back of a spoon.
  9. Return the chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the tops of the chicken.
  10. Place the skillet in the preheated oven and bake, uncovered, for 15-18 minutes, or until the internal temperature of the chicken reaches 165°F / 74°C. Check with an instant-read thermometer inserted into the thickest part of the breast.
  11. Remove the skillet from the oven. Switch the oven to broil (high).
  12. Place a slice of Swiss cheese on top of each chicken breast. Return the skillet to the oven and broil for 1-2 minutes, watching carefully, until the cheese is melted and bubbly with golden spots. Keep your eye on it—broilers vary widely.
  13. Let the dish rest for 5 minutes out of the oven. This allows the juices to redistribute and the sauce to settle.
  14. Garnish with fresh chopped parsley and serve hot, with extra sauce spooned over the top.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a covered skillet over low heat with a splash of chicken broth or water, or microwave at 50% power in 30-second intervals until heated through. This dish can be frozen for up to 2 months; thaw overnight in the fridge before reheating gently. The sauce may separate slightly when reheated—whisk in a splash of cream to restore smoothness. For a complete low-carb meal, serve alongside steamed green beans or a simple side salad.
