  • 1/4 cup honey
  • 1/4 cup mayonnaise
  • 2 tbsp yellow mustard (classic American or Dijon)
  • 1 tbsp white vinegar
  • 1 pinch cayenne pepper (optional)

Instructions

  1. In a small bowl, whisk together the honey, mayonnaise, yellow mustard, white vinegar, and cayenne (if using) until smooth and creamy. Taste and adjust the balance of sweetness and tang—it should be sweet with a pleasant bite. Cover and refrigerate while you prepare the chicken.
  2. Set up a breading station: place the flour, kosher salt, black pepper, paprika, and garlic powder in a shallow dish and whisk to combine. In a separate shallow bowl, beat the egg with the buttermilk until well blended. Place the panko breadcrumbs in a third shallow dish.
  3. Pat the chicken strips dry with paper towels. Working one piece at a time, dredge each strip in the seasoned flour, shaking off any excess. Dip it into the egg mixture, allowing the excess to drip off, then press it firmly into the panko breadcrumbs, coating all sides thoroughly.
