  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened cocoa powder, sifted
  • 1/4 cup all-purpose flour, spooned and leveled
  • 1/4 teaspoon kosher salt
  • 1/2 cup semi-sweet chocolate chips or chunks
  • 1/2 cup walnut halves, roughly chopped

Instructions

  1. Preheat the oven to 350°F (177°C). Line an 8×4-inch loaf pan with parchment paper, leaving overhang on two opposite sides to create sling for easy removal. This small pan concentrates the batter for thick, fudgy brownies.
  2. Melt the butter in a medium microwave-safe bowl in 30-second bursts, stirring after each, until fully liquid (about 1 minute total). Add the sugar and whisk vigorously for 1 minute until the mixture is smooth and glossy — this dissolves the sugar and creates a shiny crust.
  3. Whisk in the eggs one at a time, incorporating fully after each addition. Stir in the vanilla extract. The batter should be thick and slightly tacky. Over-whisking at this stage can incorporate too much air and make the brownies cakey instead of fudgy.
  4. Sift the cocoa powder and flour together over the wet mixture to remove lumps. Add the salt. Fold gently with a rubber spatula until just combined — stop as soon as no dry streaks remain. Overmixing develops gluten and toughens the texture.
  5. Fold in the chocolate chips and chopped walnuts with a few strokes, reserving about 1 tablespoon each to sprinkle on top for a decorative finish. The batter will be very thick and fudgy.
  6. Scrape the batter into the prepared pan, spreading it evenly with the spatula. Top with the reserved chocolate chips and walnuts, pressing them lightly into the surface. This ensures a beautiful, bakery-style top.
  7. Bake on the center rack for 22–25 minutes. At 22 minutes, test by inserting a toothpick into the center: it should come out with a few moist, fudgy crumbs attached, not fully clean. Overbaking will dry out the brownies — err on the side of underdone for ultimate fudginess.
  8. Remove the pan from the oven and set on a wire rack. Let the brownies cool completely in the pan, about 1 hour. Cooling allows the structure to set; cutting warm will result in a gooey mess.
  9. Once cool, use the parchment sling to lift the block out onto a cutting board. Using a sharp chef’s knife, cut into 4 equal rectangles (about 4×2 inches each). For clean cuts, wipe the blade between slices.
  10. Serve at room temperature or slightly warmed. For an extra indulgent touch, top with a scoop of vanilla ice cream and a drizzle of warm fudge sauce.

Notes

Store brownies in an airtight container at room temperature for up to 4 days. For longer storage, wrap individually in plastic wrap, place in a freezer bag, and freeze for up to 3 months. To reheat, microwave a single brownie on high for 10–15 seconds until just warm and soft — avoid overheating or the chocolate may seize.
