Smoked Dry Rub Chicken Wings

Smoked Dry Rub Chicken Wings - recipe card

These smoked dry rub chicken wings are packed with smoky, spicy, and slightly sweet flavor from a custom spice blend. Slow-smoked until tender, then crisped at high heat, they deliver a perfect balance of juicy meat and crackling skin.

Ingredients

Scale
  • 4 lbs chicken wings, separated into flats and drums, tips discarded
  • 2 tbsp vegetable oil
  • 2 tbsp packed light brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper

Instructions

  1. Pat the separated chicken wings dry with paper towels. Removing excess moisture ensures the dry rub adheres well and the skin crisps properly during cooking.
  2. In a small bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, chili powder, kosher salt, black pepper, and cayenne pepper. Whisk until evenly distributed.
  3. Place the dried wings in a large bowl. Drizzle with vegetable oil and toss to coat evenly. Sprinkle the dry rub mixture over the wings and use your hands to massage it into every surface, ensuring each wing is fully coated.
  4. Cover the bowl with plastic wrap and refrigerate the seasoned wings for at least 1 hour, or up to overnight. This resting time allows the flavors to penetrate the meat and helps the rub form a better bark during smoking.
  5. If using a smoker, prepare it for indirect heat at 225°F (107°C). Add your choice of wood chips (hickory, apple, or cherry) to the smoker box or directly on the coals. If using an oven as an alternative, preheat to 250°F (121°C) and place a water pan on the lower rack.
  6. Arrange the wings in a single layer on a wire rack set inside a rimmed baking sheet. This setup promotes even air circulation, which is essential for consistent cooking and smoke penetration.
  7. Place the baking sheet in the smoker or oven. Smoke at 225°F (107°C) for 1 hour 30 minutes to 2 hours, or until the internal temperature of the thickest part of a wing reaches 165°F (74°C) when measured with an instant-read thermometer.
  8. To crisp the skin, increase the smoker temperature to 400°F (204°C) for the final 10–15 minutes. Alternatively, transfer the wings to a preheated broiler and cook 3–5 minutes per side, watching closely to prevent burning.
  9. Remove the wings from the heat and let them rest on the wire rack for 5 minutes. Resting allows the juices to redistribute and prevents the meat from drying out.
  10. Serve the smoked dry rub wings immediately with your favorite dipping sauces (e.g., ranch or blue cheese) and fresh celery sticks.

Notes

Store leftover wings in an airtight container in the refrigerator for up to 4 days. To reheat, place on a wire rack over a baking sheet and warm in a 350°F (177°C) oven for 10–12 minutes, or until heated through and crispy. For longer storage, freeze the smoked wings in a single layer on a baking sheet, then transfer to a freezer bag for up to 3 months. Reheat directly from frozen at 375°F (190°C) for 20–25 minutes.
