Souperburger Sandwiches

Souperburger Sandwiches - recipe card

A savory sandwich featuring a juicy beef patty simmered in a rich, creamy mushroom soup sauce, served on toasted buns for a comforting, hearty meal. The combination of seasoned beef, tender mushrooms, and velvety sauce creates a satisfying texture and deep umami flavor that feels like a warm hug in sandwich form.

Ingredients

Scale
  • 1 1/2 lbs ground beef (80/20)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper, freshly ground
  • 1 tbsp vegetable oil
  • 1 medium yellow onion, thinly sliced (about 1 cup)
  • 8 oz cremini mushrooms, stemmed and sliced 1/4-inch thick
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup whole milk
  • 1/2 cup low-sodium beef broth
  • 1 tsp Worcestershire sauce
  • 4 sesame seed hamburger buns, split
  • 2 tbsp unsalted butter, softened

Instructions

  1. In a large bowl, combine the ground beef, kosher salt, and black pepper. Mix gently with your hands until just incorporated — do not overwork, as it will make patties tough. Divide the mixture into 4 equal portions and shape each into a 1/2-inch-thick patty, pressing a small indent in the center to prevent doming during cooking.
  2. Heat the vegetable oil in a large, heavy-bottomed skillet or cast-iron pan over medium-high heat until the oil shimmers. Carefully place the patties in the skillet, leaving space between them. Cook for 4 minutes without moving, until a deep golden-brown crust forms, then flip and cook for another 3 minutes for medium doneness (internal temperature of 160°F / 71°C). Transfer the patties to a plate and set aside. Do not wipe the skillet.
  3. Reduce the heat to medium. Add the sliced onion and mushrooms to the same skillet, scraping up any browned bits from the bottom with a wooden spoon — those bits add deep flavor. Cook, stirring occasionally, for 5-6 minutes until the onions are translucent and the mushrooms have released their liquid and started to brown. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle the flour over the onion-mushroom mixture and stir constantly for 1 minute to cook off the raw flour taste. The mixture will become pasty. Slowly pour in the beef broth while stirring vigorously to dissolve the flour and create a smooth base.
  5. Add the condensed cream of mushroom soup, whole milk, and Worcestershire sauce. Stir until fully combined, then bring the sauce to a gentle simmer over medium heat. Reduce the heat to low and let the sauce cook for 3-4 minutes, stirring occasionally, until it thickens enough to coat the back of a spoon.
  6. Return the cooked patties to the skillet, nestling them into the sauce. Spoon some of the sauce over the tops. Let them simmer together on low heat for 5 minutes, turning once halfway, to meld the flavors and keep the patties moist. The sauce should be thick and creamy, not runny.
  7. While the patties simmer, spread the cut sides of the hamburger buns with the softened butter. Place them buttered-side down in a separate skillet over medium heat and toast for 2-3 minutes until golden brown and crisp. This prevents the buns from getting soggy from the sauce.
  8. To assemble, place a patty on the bottom half of each toasted bun. Spoon a generous amount of the mushroom sauce over the patty, then cap with the top bun. Serve immediately while hot, with extra sauce on the side if desired.

Notes

Storage: Refrigerate leftover patties and sauce separately for up to 3 days. Freezing: Freeze assembled sandwiches (wrap tightly) for up to 2 months. Reheating: Reheat patties in sauce in a covered skillet over medium-low heat for 8-10 minutes, or microwave a single patty on a microwave-safe plate for 1-2 minutes until steaming. Toast fresh buns before serving.
