  • 3 tablespoons chipotle peppers in adobo sauce, finely minced (about 2 peppers plus 1 tablespoon sauce)
  • 1/4 cup fresh lime juice (from about 2 limes)
  • 1/4 cup fresh orange juice (from about 1 orange)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1.5 lb boneless, skinless chicken breasts (about 4 medium breasts)

Instructions

  1. In a medium bowl, combine the minced chipotle peppers with adobo sauce, lime juice, orange juice, olive oil, minced garlic, ground cumin, smoked paprika, dried oregano, kosher salt, and black pepper. Whisk vigorously until the marinade is well combined and the spices are fully incorporated. The marinade should have a slightly thick, pourable consistency with a bold, smoky aroma.
  2. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the thicker parts of each breast to an even thickness of about 3/4 inch (2 cm) to ensure quick, even cooking and better marinade absorption. If you prefer, you can skip this step and adjust cooking time accordingly.
  3. Add the chicken breasts to a large resealable plastic bag or a shallow glass dish. Pour the marinade over the chicken, turning each piece to coat thoroughly. Seal the bag (or cover the dish) and massage the chicken gently to ensure every surface is coated. Place in the refrigerator and marinate for at least 30 minutes, or up to 12 hours for deeper flavor. Do not marinate longer than 24 hours as the acid will begin to break down the meat’s texture.
  4. When ready to cook, remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade—do not reuse it as a sauce. Pat the chicken dry with paper towels to promote browning and prevent steaming during cooking. Let the chicken sit at room temperature for 15 minutes before cooking to ensure even cooking.
  5. To grill: Preheat a gas or charcoal grill to medium-high heat (about 375-400°F / 190-204°C on the thermometer, but you should see a medium-high flame). If using charcoal, arrange the coals so there is a hotter direct-heat zone and a cooler indirect-heat zone. For gas, set one burner to medium-high and the others to low.
  6. Place the chicken on the grill grates over direct heat. Cook for 4-5 minutes per side without moving the chicken, until you see nice grill marks and the chicken releases easily from the grates. Then move to indirect heat if flare-ups occur, and continue cooking until the internal temperature reaches 165°F (74°C) at the thickest part of the breast. Total grill time should be about 8-10 minutes for 3/4-inch breasts.
  7. Alternative oven method: Preheat oven to 375°F / 190°C. Heat a large oven-safe skillet (cast-iron works well) over medium-high heat with a drizzle of olive oil. Sear the chicken breasts for 2-3 minutes per side until golden brown. Then transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the internal temperature hits 165°F / 74°C. Remove from oven and rest for 5 minutes before slicing.
  8. Stovetop method: Heat a large skillet over medium-high heat with a tablespoon of olive oil until it shimmers. Add the chicken breasts and cook without crowding—working in batches if needed. Cook for 4-5 minutes per side, turning only once, until the chicken is golden and the juices run clear. Use a meat thermometer to confirm the internal temperature reaches 165°F / 74°C. Let rest for 5 minutes.
  9. Regardless of cooking method, always let the chicken rest for at least 5 minutes after cooking. This allows the juices to redistribute, ensuring moist, flavorful meat. Slice against the grain for maximum tenderness.
  10. Serve the grilled chicken whole or sliced, with your favorite Whole30 sides like roasted vegetables, cauliflower rice, or a fresh salad. Garnish with lime wedges and fresh cilantro if desired.

Notes

Storage: Leftover cooked chicken can be stored in an airtight container in the refrigerator for up to 4 days. Freeze: To freeze, place cooked chicken in a freezer-safe bag or container and freeze for up to 3 months. Reheat: For best results, reheat in a 350°F / 177°C oven for 8-10 minutes, or in a skillet over medium heat until warmed through, adding a splash of water or broth to prevent dryness. The raw marinade should not be frozen with the chicken; instead, freeze the chicken and marinade separately if meal-prepping ahead of time.
