  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/4 cup unsalted butter (4 tbsp)
  • 2 tbsp Cajun seasoning (store-bought or homemade blend)
  • 1 tbsp hot sauce (e.g., Tabasco or Crystal)
  • 1 tbsp Worcestershire sauce
  • 1 tsp honey

Instructions

  1. Preheat your oven to 400°F (200°C) with a rack in the center position. Line a large rimmed baking sheet with aluminum foil and place a wire rack (like a cooling rack) on top — this elevates the wings so hot air circulates all around, ensuring even crisping on all sides. Spray the rack lightly with nonstick cooking spray.
  2. Pat the chicken wings completely dry using paper towels. This step is critical — any moisture left on the skin will steam instead of crisp. In a large bowl, toss the wings with the baking powder, kosher salt, garlic powder, onion powder, smoked paprika, cayenne, oregano, thyme, and black pepper until every piece is evenly coated. The baking powder is the secret to oven-crispy skin; it raises the pH and helps the skin dry out and brown.
  3. Arrange the seasoned wings in a single layer on the prepared wire rack, spacing them so they are not touching. Crowding will trap steam and produce soggy wings. Place the baking sheet in the preheated oven and bake for 20 minutes. During this time, the baking powder begins to break down the skin, creating tiny bubbles that will later turn crisp and golden.
  4. After 20 minutes, carefully flip each wing using tongs. The skin should be starting to dry and lightly brown. Return the sheet to the oven and continue baking for another 20 to 25 minutes, rotating the pan halfway through, until the wings are deep golden brown and the internal temperature reaches 165°F (74°C) when checked with an instant-read thermometer inserted into the thickest part of the drumette. The skin should be visibly crispy and brittle to the touch.
  5. While the wings bake, prepare the Cajun sauce. In a small saucepan over medium-low heat, melt the unsalted butter. Once fully melted, whisk in the Cajun seasoning, hot sauce, Worcestershire sauce, and honey. Cook for 1 minute, whisking constantly, until the mixture is smooth, fragrant, and steamy. Do not let it boil — the butter can separate. Remove from heat and set aside, keeping it warm.
  6. When the wings are done, transfer them to a large mixing bowl immediately. Pour the warm Cajun butter sauce over the hot wings and toss gently with a rubber spatula or by covering the bowl and shaking firmly until each wing is evenly coated. The residual heat will help the sauce cling without making the skin soggy.
  7. Serve the wings hot, arranged on a platter with optional celery sticks and blue cheese or ranch dressing on the side for dipping. For the best texture, do not hold the sauced wings for more than a few minutes before serving.

Storage: Refrigerate leftover wings in an airtight container for up to 4 days. Freezing: Place cooled, unsauced wings in a freezer bag for up to 3 months — sauce before reheating. Reheating: To restore crispiness, arrange wings on a wire rack over a baking sheet and reheat in a 375°F (190°C) oven for 10-12 minutes, then toss with reserved sauce. Microwaving is not recommended as it will make the skin rubbery.
