A zesty, tangy, and savory dry rub that captures the signature Wingstop flavor profile. This versatile blend of lemon zest, cracked black pepper, and aromatic spices clings beautifully to crispy fried chicken wings or roasted vegetables, delivering a bright, peppery kick with every bite.

  • 3 tablespoons finely grated lemon zest (from 34 large lemons)
  • 2 tablespoons coarsely cracked black pepper
  • 1 tablespoon kosher salt
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sugar
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions

  1. Grate the zest from 3-4 large lemons using a microplane or fine grater, being careful to only remove the yellow outer layer and avoid the bitter white pith. You need 3 tablespoons of finely grated zest. Spread the zest on a paper towel-lined plate and let it air dry for 10 minutes while you measure the other spices.
  2. In a small mixing bowl, combine the cracked black pepper, kosher salt, garlic powder, onion powder, sugar, and cayenne pepper (if using). Whisk with a fork until all the spices are evenly distributed.
  3. Add the dried lemon zest to the spice mixture. Use your fingertips to rub the zest into the spices, breaking up any clumps and ensuring the lemon oil is released and evenly distributed throughout the rub.
  4. Continue mixing until the rub is uniform in color and texture. The lemon zest should be well incorporated, and the mixture should be fragrant with strong lemon and pepper notes.
  5. Transfer the rub to an airtight glass jar or container with a tight-fitting lid. Store in a cool, dry place away from direct sunlight. Use immediately or store for up to 2 weeks.
  6. To use, toss hot, freshly cooked crispy chicken wings in the rub while they are still warm. Use about 1 tablespoon of rub per pound of wings, or adjust to taste. The residual heat and surface moisture will help the rub adhere.
  7. For best results, apply the rub immediately after frying or roasting. The wings should be just out of the oil or oven and still glistening with oil, which helps the spices stick and melt into the skin.
  8. If you prefer a more intense flavor, you can also sprinkle the rub over the wings and then gently massage it in with your hands (wearing gloves if preferred). Let the wings rest for 2-3 minutes before serving to allow the flavors to meld.
  9. This rub can also be used as a finishing seasoning for roasted vegetables, grilled chicken, popcorn, or even sprinkled over avocado toast for a tangy kick.
  10. For a fully balanced flavor, taste a tiny pinch of the rub before using. Adjust salt or pepper to your preference, keeping in mind that it will be applied to food that may already be salted.

Notes

Storage: Store the dry rub in an airtight container at room temperature for up to 2 weeks. Freezing is not recommended as the lemon zest may lose its vibrant aroma. Reheating: This is a no-cook seasoning blend, so no reheating is needed. For best results, use on freshly cooked hot wings. If using on leftovers, reheat wings in an air fryer at 375°F (190°C) for 4-5 minutes until crispy, then toss with the rub.
